Kale Pesto with Basil Essential Oil
Pesto pasta is a much loved dish in my house. It's basically foodie heaven! Pasta combined with a ton of veggies all blended up into a freaking delicious sauce?! Who can say no to that? I seriously couldn't ask for more.
Basil is typically the star of any pesto recipe.
And that's wonderful, because this beautiful herb is filled to the brim with vitamin K and brings a fair amount of manganese, copper, vitamin A, vitamin C, calcium and more to the table. And the goodness doesn't stop there! The flavanoids in basil have been found to have a protective effect on human white blood cells. And its anti-inflammatory properties can help prevent the growth of certain icky bacteria! Isn't that awesome? The magnesium and vitamin A also protect your cardiovascular system and basil's volatile oils even have some fantastic anti-inflammatory properties (source). Needless to say, basil is pretty wonderful.
But there's one problem - basil can be pretty difficult to stumble upon when it's not in season... which is a total bummer, because a pesto just feels off without it.
