Arugula, Chevre, and Beet Salad with Grapefruit-Infused Vinaigrette
I must admit, I have very little previous experience working with essential oils other than my homemade solid perfumes, which I make for gifts (what could be more amazing than a just-for-you customized perfume?) When Heather invited me to guest blog, I knew I wanted to develop a recipe using a citrus essential oil, and I was so curious about using essential oils in salad dressings. I adore homemade dressings. They’re so simple to make, and they taste infinitely better than their preservative-packed store-bought counterparts. One of my absolute favorite salads combines arugula, roasted beets, and goat cheese. I swear—this is the most perfect salad. The tanginess of the goat cheese, the peppery arugula, plus the earthy beets--all of the disparate ingredients come together for a seriously delicious bite. All it needs is a flavorful homemade dressing, and grapefruit lends a sweet and tart citrus flavor in this salad.
Scientifically, a salad dressing is an emulsion: a mixture of two or more ingredients that don't actually want to mix together. As Heather mentioned to me in our communication, the dressing would need a carrier oil to help the essential oil spread. I normally use olive oils in my dressings, which worked perfectly. My usual salad dressing is a combination of olive oil, lemon juice, Dijon mustard, minced herbs, garlic, and salt and pepper. I simply added four drops of grapefruit essential oil to the olive oil and mixed as usual. The salad couldn't be easier: a few handfuls of arugula, healthy dollops of fresh goat cheese, and coins of peeled, sliced, roasted beets.
