Lemon Carrot Cake
Yes, you read that title correctly. Lemon carrot cake is a thing and a delicious one at that.
My friend Heather graciously sent me some essential oil samples and I could not wait to get into the kitchen and experiment with them. I especially wanted to use the lemon one she sent. On my list were lemon ricotta pancakes and a lemon loaf that greatly resembled Starbucks' (because really, who can resist that glaze?!).
I made those and they were SO delicious. I was having a hard time deciding which one to share. So I decided to get back in the kitchen and make the carrot cake my mom had asked me to bring over that evening. As I was making it, I wondered what would happen if I gave it a little lemon twist. I decided to go for it. I could just imagine the tangy goodness mixed with the sweet pineapple chunks and carrot bits. Oh, and that cream cheese frosting. Mmm...
Well, hesitantly, I added the lemon oil. Suddenly it all smelled even better! Oh goodness guys, this stuff was outstanding! The aroma that took over my whole house was so delish, I couldn't wait to bite into this cake. Soon after it cooled and I got it frosted was the moment of truth. Would this cake me as delicious as it smelled?
Well, my friends... it was. And even better! It was everything I love about carrot cake with that tang of lemon that I expected. SO DELICIOUS! If you feel extra adventurous and love you some citrus, feel free to add a tiny bit to the frosting mixture as well. I decided to share this recipe because I thought it was the perfect fall cake you all would love. Hope you enjoy this as much as I did!
