Vegan Lemon Scones with Thyme Butter
In late November, my fiancé and I went to London for a short vacation. I was really looking forward to having tea time, a tradition I have never really experienced! We ended up at the Muffin Man Tea shop in South Kensington and feasted on tea, carrot cake, and cucumber sandwiches. I highly recommend stopping by this little shop if you are ever in London!
Once back in the States, we decided to invest in a real tea set and continue to have afternoon tea time when our schedules permitted. And what is tea time without snacks?
When I was handed these essential oils to experiment with, I originally thought I’d use them in more savory dishes like chicken or veggies. But now armed with teapot in hand, I thought “Hey! I’d love some scones with butter and jam!”, so I did some experimenting. These vegan lemon scones topped with thyme butter and rosemary & thyme fig jam hit the spot. A touch of sweetness, a little bit of tartness, and a hint of savory really fit perfectly into an afternoon snack.
